Overnight Oats

Do you ever start thinking about breakfast while you are cooking dinner? I do. 

While cooking dinner and watching the pups play with their new "Goodwill babies" I searched the internet for some fun ideas.




I love creating new and fun things for breakfast and I discovered overnight oats. Tonight, I am starting Chai Tea Overnight Oats.


1/3 cup oats


2/3 cup water with chai tea steeped for 4 minutes


1T Chia Seeds




Cinnamon 


Mix together and set in fridge until morning :)

Now, the hard part! Waiting until morning!!!

Pearl doesn't have a problem with it.

A hurricane heading straight for your home is a reason to stay indoors. Today was no different! Even though there was no reason to actually close anything, because the hurricane decided to go another way and just give us a windy and rainy day, schools and businesses were closed today. I had to head into the office for a little bit of work but after heading home, I found a desire to experiment in the kitchen.



Sitting on the couch, cuddling with my Pearl on a cloudy afternoon made me decide to try something I have been just dying to try. Vegan banana soft serve. I had read about this and seen pictures, but seriously doubted it could taste like real ice cream...oh how wrong I was!!!




First...I went with straight banana. It is AHHHH-MA-ZING how simple this is! I just froze two bananas and stuck them in my small Ninja blender (which I LOVE). One taste was all it took...complete heaven!!! Then, of course, I had to get creative with it. Next, I sprinkled a little bit of cinnamon in the mix and blended it again. It only took about 15 seconds and MAGIC. 


Would it be so wrong to lick the bowl???




After eating about half of the "ice cream" I got a fancy idea...strawberry banana! Oh my! Five frozen strawberries thrown in with the rest of the banana...YUM! 



It's safe to say that this rainy day was definitely worth it!
